- You’re feeling homesick and miss your mom’s cooking.
- You want an easy dessert for Christmas Eve "Noche Buena", New Year's Eve "Mega Noche", or any holiday.
- You’re cooking for 2 to 4 people and want some leftovers.
I shop at Fred Meyer/Walmart, and here are the ingredients I used for this recipe:
- 4 cans of Kroger Fruit Cocktail in Extra Light Syrup (15 oz / 425 g)
- 1 can of Nestlé La Lechera Sweetened Condensed Milk (14 oz / 397 g)
- 2 cans of Nestlé Media Crema Table Cream (7.6 oz / 225 ml)
- Kroger Elbow Macaroni (16 oz / 1 lb / 453 g) - you only need half of this
Add-on:
- I also added Havarti cheese, sliced into cubes, as it closely resembles the taste of Eden cheese.
For storage
The recipe fits in a 2-liter (or 8.5-cup) container for storage. Be sure to chill it in the fridge and enjoy it after four hours, or savor it even more the following day.
Instructions:
1. Prepare the Ingredients
- Start by draining the juice from the fruit cocktail. Set aside.
2. Cook the Macaroni
- Boil the macaroni until it's al dente. Drain and let it cool. I used 8 oz (226 g), which is just half of the Kroger Elbow Macaroni I purchased, as that was the smallest package available.
3. Combine Everything
- In a large bowl, add the drained fruit cocktail, cooked macaroni and Nestle table cream. Stir until well blended.
4. Adjust the Sweetness
- Add the condensed milk according to your taste preference. Mix gently to ensure that everything is evenly coated.
Add Optional Ingredients: If you like, add any of the optional ingredients such as raisins, pineapple tidbits, cheese cubes, kaong, nata de coco, or coconut shreds. Mix well.
5. Chill in the Fridge
- Transfer the salad to a large container and refrigerate for at least 4 hours to let the flavors meld.
Serve and Enjoy: Once chilled, your Filipino Macaroni Fruit Salad is ready to serve. Enjoy this sweet and creamy treat with family and friends!
This recipe is as easy as it gets, and I hope you love it as much as I do. Happy cooking!
